- 6 cups Rice
- 2 pcs Egg Large
- 2 tbsp Vegetable Oil
- ¼ cup Preserved Ham – Chinese Ham – Jinhua Ham Diced
- 10 pcs Shrimp No shell and deveined
- ½ cup Garden Peas – Sweet Peas – English Peas – Green Peas Canned or frozen
- ½ cup Carrot diced
- Salt To taste
- ¼ tsp Ground White Pepper Powder
- 1 tbsp Light Soy Sauce
- 2 pcs Spring Onion – Scallion – Green Onion Chopped

Preparation
- Prepare and measure all ingredients accurately ahead of time.
- Devein and remove the shell of the shrimp and set it aside.
- Cut all vegetables according to ingredient notes.
- For frozen green peas, it is important to thaw them first at room temperature before cooking.
Rice
- You may choose to cook steamed rice or use leftover rice.
- It is good to separate grains by pressing the rice using a scooper. It is a crucial step, especially if the leftover rice is too sticky.
Cooking
- Whisk two eggs in a small bowl and set aside.
- Use a wok or frying pan and heat the vegetable oil.
