Ingredients
 

  • 250 grams (8.82 oz) Raspberry
  • 250 grams (8.82 oz) Strawberry
  • 250 grams (8.82 oz) Gelatin Jelly
  • 300 grams (10.58 oz) Custard
  • 250 grams (8.82 oz) Whipped Cream
  • 10 pcs Sponge Finger – Lady Finger
  • 120 ml (4.06 floz) Sherry

Instructions
 

  • Line the bottom of your trifle bowl with the sponge fingers in a nice even layer, covering the bottom. Evenly pour the sherry over the sponge, and leave this to soak for 5 minutes.
  • Set aside a handful of the raspberries and strawberries (these will go on top of the trifle at the end). Then cover the soaked sponge with the remaining raspberries and strawberries in an even mix.
  • Evenly pour over your liquid jelly and leave it in the refrigerator to set (as per packet instructions).
  • once set, spoon the liquid on top of the jelly, evenly and create a smooth surface. Then spoon the whipped cream on top, again ensuring an even layer.
  • Finish the trifle by decorating with the remaining fruits and enjoy!

NOTES

  • If you don’t have sponge fingers, use a pound cake and cut it into strips.
  • Use different summer fruits such as blackberries, redcurrants, or blackcurrants.
COOKING TIPS:
The key is to make sure the jelly is fully set before adding the custard layer.
