Beautiful, light pastry buns filled with creamy cottage cheese. Is there anything better? “Túrós Batyu” is one of the most loved pastries in Hungary for a perfect breakfast or brunch with friends and family.

These cottage cheese bundles are irresistibly delicious and can be found in every pastry shop in Hungary. The delicious, creamy filling is traditionally made of cow’s cottage cheese, a very famous ingredient in many Hungarian pastries; if you don’t have cottage cheese in your country, you can replace it with ricotta.

“Túrós Batyu” can also be called “Túrós Bukta” in Hungary, “batyu” means bundle, and “bukta” means fall/ something has fallen; unfortunately, the exact origin of the recipe is unknown.

Ingredients
 

Cream

  • 3 tbsp White Sugar – Regular Sugar – Granulated Sugar
  • 2 tbsp Semolina
  • 9 grams (0.32 oz) Vanilla Powder
  • 1 pc Lemon Peel/zest
  • 250 gram (8.82 oz) Cottage Cheese
  • 1 tbsp Sour Cream
  • 1 pc Egg

Dough

  • 500 grams (1.1 lb) Pastry Flour – Fine Flour
  • 285 ml (9.64 floz) Milk lukewarm
  • 1 pinch Salt
  • 18 grams (0.63 oz) Fresh Yeast
  • 75 grams (2.65 oz) Margarine
  • 2 pcs Egg Yolk
  • 3 tbsp White Sugar – Regular Sugar – Granulated Sugar

Instructions
 

  • First, Grab a small mixing bowl, pour in some milk (lukewarm), add in the yeast, cover it and leave it for a few minutes until you prepare the rest of the dough.
  • In a large mixing bowl, mix the flour, salt, sugar, and margarine. Later on, add the two egg yolks and continue mixing; create a small hole in the middle of the mixture and pour the yeast mixture. You can mix it with your hands or can use a stand mixer. Work them well together, then cover the dough with a kitchen towel/cloth, place it in a warm place and leave the dough to rise for an hour.
  • In a large mixing bowl, mix the ingredients for the cream (sugar, powdered vanilla sugar, cottage cheese, lemon peel, sour cream, egg, semolina); let it rest for a few minutes so the semolina will rise and soften the cream.
  • Grab a large wooden board or a large cutting board, and sprinkle it with some flour so the dough won't stick. Flatten the dough with a rolling pin to a thickness of 1 cm (0.3 inches), and cut it into medium-sized thin cubes.
  • In the middle of the cube, place one tablespoon of the cream, and seal them by pinching the four corners together.
  • Once the cubes are closed, grab a baking sheet, place baking paper on it, and transfer the cottage cheese bundle. With a silicone brush, brush some egg whites on top and leave them to rest for 30 minutes.
  • Preheat the oven to 180°F/82°C.
  • Bake for about 20 minutes or until golden brown.
  • Take them out, wait till they are cooled down, then sprinkle some powdered sugar on the top and serve.
