Ingredients
Dough
- 550 grams (1.21 lb) Pastry Flour – Fine Flour
- 150 grams (5.29 oz) Butter Melted
- 100 grams (3.53 oz) Lard – Fatty Pork Fresh or homemade
- 60 grams (2.12 oz) Icing Sugar – Powdered Sugar – Confectioners Sugar
- 1 pinch Salt
- 10 grams (0.35 oz) Fresh Yeast
- 2 pcs Egg Yolk
- 100 ml (3.38 floz) Milk Lukewarm
Walnut Filling
- 300 grams (10.58 oz) Walnut Ground
- 100 grams (3.53 oz) White Sugar – Regular Sugar – Granulated Sugar
- 1 tsp Honey
- 4 tsp Ground Cinnamon Powder
- 100 ml (3.38 floz) Milk
- 2 packs Vanilla Sugar
- 1 pc Lemon Juice
- Lemon Zest 1 lemon
Poppy Seed Filling
- 300 grams (10.58 oz) Grounded Poppyseed
- 100 grams (3.53 oz) White Sugar – Regular Sugar – Granulated Sugar
- 1 tsp Honey
- 4 tsp Ground Cinnamon Powder
- 100 ml (3.38 floz) Milk
- 2 pack Vanilla Sugar
- 1 pc Lemon Juice
- Lemon Zest 1 lemon
Topping
- 1 pc Egg Yolk
- 1 pc Egg White Left over from the dough
- 1 tbsp Milk Optional
Instructions
Dough
- Dissolve the icing sugar in the lukewarm milk and add the yeast to it.
- In a bowl, add the flour.
- Then, add the yeast-milk mixture, egg yolks, melted butter, salt, and the grated lemon zest.
- Work well together with the dough; you need to get a relatively stiff, flexible dough.
- Cover the dough and let it rest in a warm place while preparing the fillings.
Walnut Filling
- In a bowl, mix all the ingredients for the filling. Set aside.
Poppy Seed Filling
- In a bowl, mix all the ingredients for the filling. Set aside.
Assembly
- Divide the dough into two.
- Flatten each dough to about 1 cm (0.5 inches) thick.
- Spread the walnut filling into the first dough and the poppy seed filling into the 2nd dough.
- Gently roll each dough securing the filling inside.
- Transfer the dough to a lined baking sheet.
Topping
- Beat together the yolk, egg whites, and milk.
- Brush it in top of the dough.
Baking
- Make sure that the oven has been preheated to 200C (392F).
- Bake the bread for about 50 minutes or until they are golden brown.
