The Indian Traditional Baked Hard Bread from Rajasthan – Baati is heavy and fulfilling. Cooking involves making a dough from whole wheat flour and dividing that dough into small sections. The sections are then rolled into balls and pressed. For cooking, the dough balls undergo baking in the oven or Tandoor.

The traditional method of preparing Baati involves baking them in a clay oven. In rural India, the people cook Baati with the heat of dung cakes. Having Daal Baati in rural India is a one-of-a-kind experience.

The combination of Daal Baati is a classic one. Dal is a broth made up of lentils, and it is one of the steps in North Indian cuisine. Baati is hard in texture. There is a softer version of Baati known as Bafla.

But Baati requires less time for preparing as compared to Bafla. Along with Dal, you can also enjoy Baati with pickles and other curry-based dishes.

Ingredients
 

  • 2 cups Wheat Flour
  • 1/4 tsp Salt
  • 1/4 tsp Baking Powder
  • 1/4 cup Clarified Butter
  • Water
  • Clarified Butter For coating

Instructions
 

  • In a large bowl, add wheat flour, baking powder, salt, and clarified butter. Combine everything well and make sure that the dough is moist.
  • Now, start adding water to the flour and knead it into a soft dough.
  • Take a section of dough and roll it into a small ball. With your fingers, make an impression of 'X' and press it a little.
  • Prepare such dough balls with all the dough.
  • Next, place the Baati in a gas oven, also known as Tandoor. Bake them for 30 minutes until golden brown.
  • Once the Baati is ready, dip it in melted clarified butter and keep it in a casserole.
  • Your Indian Traditional Baked Hard Bread from Rajasthan – Baati is ready. Serve the Baati with Daal, pickles, and onion slices.

NOTES

If you don’t have a Gas Tandoor, you can also bake the Baati in a microwave oven in the grill mode.
RECIPE VARIATIONS:
A softer version of Baati is the Bafla. It is an authentic bread from Madhya Pradesh.
SERVE WITH:
Serve the Baati with lentil stew and pickles.
