The Indian Traditional Corn Flatbread from Punjab – Makki Ki Roti, originates from the region of Punjab. Its preparation involves kneading cornmeal into a dough and rolling flatbreads out of it. Since cornmeal doesn’t contain any cohesion, it is quite a challenge to shape Makki Ki Roti. Once the bread takes its shape, the next step is to roast it in a pan. Makki Ki Roti is generally a winter and spring dish. It tastes delightful with butter and jaggery pieces. Though you can enjoy Makki Ki Roti with any Curry-based dish, its combination with Sarson ka Saag is classic. Sarson Ka Saag is a curry prepared with fresh mustard greens. The combo Makki Ki Roti and Sarson Ka Saag from Punjab is one of the most delicious dishes and makes a complete meal.

Ingredients
 

  • 2 cups Cornmeal – Maize Flour
  • ½ cup Water Hot
  • 1 tsp Carom Seed – Ajwain
  • Salt to taste
  • Clarified Butter For roasting

Instructions
 

  • In a bowl, combine the cornmeal or maize flour and the carrom seeds.
  • Add the hot water to the flour and mix it with a spoon. Cover this mixture with a lid and set it aside so that the dough becomes warm.
  • When the mixture becomes warm, and you can work on that temperature, start kneading the dough. Work on the dough to make a soft and smooth dough. You can adjust the consistency by adding more water or cornmeal.
  • Take a medium-sized ball from the dough. Sprinkle some cornmeal on the rolling board and place the ball on it.
  • Gently start patting the dough with your fingers. As you pat the dough, move it clockwise while adding more cornmeal.
  • Keep on Patting the dough and moving till you get a thick flatbread. Don't worry if the Roti isn't perfectly round.
  • Now place a pan on the stove and spread some oil on it. Once it is hot, place the flatbread. If you find a crack on the Roti, you can fix it by pressing it.
  • As the Roti cooks from one side, flip it and let the other side roast. Keep on flipping a couple of times with a spatula until both sides are cooked.
  • Pour some clarified butter over the Roti. Your Indian Traditional Corn Flatbread from Punjab – Makki Ki Roti is ready. Serve it hot!

NOTES

Instead of patting, you can also make the Roti by rolling it with a rolling pin. However, you have to be very careful as the Roti might break. Another method is using a ziplock bag. You can place the dough on a ziplock bag and then roll the flatbread.
SERVE WITH:
Everyone loves Makki Ki Roti with Sarson Ka Saag. It is a curry of Mustard greens. However, you can also enjoy Makki KiRoti with clarified butter and jaggery.
