The word “Kulfi” is derived from the Persian word “Qulfi” which means “covered up”. The dessert originated under the Mughal Empire. “Ain-i-Akbari”, a script that records Emperor Akbar’s rule, mentions the ice cream. The creamy dessert is quite famous in the National Capital.

Apart from India, Kulfi is also popularly consumed in Bangladesh and Pakistan. Sri Lanka, Nepal, and Burma. The dish is relished by children and sold on the streets.

Ingredients
 

  • 1000 ml (33.81 floz) Whole Milk / Full-Fat Milk / Full-Cream Milk
  • cup Whipping Cream – Heavy Cream
  • 3 tbsp Khoya – Khoa – Mawa – Khuwa
  • 1 tbsp Powdered Milk – Milk Powder – Dried Milk Powder
  • 2 tbsp Nut Finely chopped
  • 5 tbsp White Sugar – Regular Sugar – Granulated Sugar
  • 5 pcs Green Cardamom Pod Seeds

Instructions
 

  • In a heavy bottom pan over high heat, add milk.
  • Add heavy cream after 5 minutes.
  • Reduce to heat to medium when the mixture comes to a boil.
  • Let the milk simmer for half an hour. Keep stirring.
  • After 30 minutes, add Khoya (Dried Milk Solid). Mix until dissolved.
  • Add sugar and crushed nuts. Use mortar and pestle to crush them.
  • Add milk powder and let it simmer for 5 minutes.
  • Remove the pan from the heat and add cardamom powder.
  • Let it cool down.
  • Pour the milk into Kulfi molds. Freeze for 6-8 hours.
  • Take out the Kulfi and place the mold under running water and tap it on a plate.
  • Serve the Kulfi.

NOTES

You can use cashews, pistachios, and almonds for the nuts.
