The Indian Traditional Green Chili Pickle or Hari Mirchi Ka Achaar is a spicy, tangy pickle made with fresh green chilies. The pickle is slow-cooked in mustard oil.

“Achaar” is a Hindi word that is derived from the Persian word “Acar”. “Acar” means “salted pickles preserved in syrup”. “Hari Mirchi” is the Hindi word for “green chili”.

Indian pickles are very common among the people. The side dish is consumed with rice dishes or curries. Bread like Parathas is often consumed with Achaar.

There are various versions of Achaar in India. These include “Aam ka Achaar”, “Gajar Ka Achaar”, and garlic pickle. Aam Ka Achaar is made with mangoes while Gajar Ka Achaar is made with carrots. Hari Mirchi Ka Achaar is manufactured in Rajasthan, Karnataka, and Maharashtra. Some other flavoring agents like mango powder and fenugreek can also be added.

Ingredients
 

  • 1 1/2 cups Green Chili chopped
  • 6 tbsp Mustard Seed
  • 3 tbsp Kitchen Salt – Cooking Salt – Kosher Salt – Rock Salt – Flake Salt – Kashering Salt
  • 2 tsp Turmeric Powder – Curcuma Powder
  • 1 cup Mustard Oil
  • 5 units Lemon

Instructions
 

  • Chop the chilies.
  • Add mustard seeds to a grinder.
  • Take a glass jar and add the chilies and ground mustard.
  • Also, add salt
  • Cover the jar and keep it in sunlight for 3 days.
  • Now, add lemon juice and turmeric.
  • Mix the ingredients well.
  • Keep it in sunlight for another day
  • Take a smoking pot and add mustard oil, heat it well.
  • Pour the oil into the jar.
  • Let the mixture rest for another few days.
  • Serve.
SERVE WITH:
Serve the pickle as a side-dish with rice dishes or curry.
