The Indian Traditional Marinated Cottage Cheese Curry from Punjab – Paneer Tikka Masala is the main course dish from North India. It consists of marinated cottage cheese cubes cooked in flavorful spicy gravy.

It consists of three words. Paneer means cottage cheese, Tikka means a grilled piece of food, and the meaning of Masala is spicy curry.

The process of Paneer Tikka is a lengthy one. It involves marinating the cottage cheese, grilling it, and cooking it in a spicy tomato gravy. Though it takes a lot of time, the delicious and rich taste of Paneer Tikka Masala makes all the wait and effort worth it. Hence, it is one of the most loved dishes across North India. Ingredients
 

Cottage Cheese

  • 250 grams (8.82 oz) Cottage Cheese Cubes
  • 1 unit Onion Cut into half, layers removed
  • 1 unit Capsicum Medium, diced
  • 6 tbsp Hung Curd – Drained Curd Greek Yogurt
  • 1 tsp Ginger Garlic Paste
  • 1 tsp Lemon Juice
  • ½ tsp Red Chili Powder
  • ½ tsp Garam Masala
  • ¼ tsp Turmeric Powder – Curcuma Powder
  • 1 tbsp Gram Flour
  • 2 pinch Ground Nutmeg Powder
  • ½ tsp Salt
  • 4 tbsp Oil

Puree

  • 1 unit Onion Large, peeled and cut into half
  • 3 units Tomato Medium
  • 1 pinch Salt
  • Water For blanching

Gravy

  • 1 tsp Ginger Garlic Paste
  • 2 tbsp Full Fat Yogurt Whisked
  • 2 tbsp Oil
  • ½ tsp Garam Masala
  • ½ tsp Red Chili Powder
  • ½ tsp Turmeric Powder – Curcuma Powder
  • ½ tsp Dried Fenugreek Leaf – Kasuri Methi
  • ½ cup Water
  • 2 tbsp Whipping Cream – Heavy Cream
  • Fresh Coriander Leaf For garnish

Instructions
 

Marinating the Grilled Cottage Cheese

  • The first step is to make Paneer Tikka. Start with taking the hung curd in a large bowl. Whisk it nicely till it becomes smooth.
  • Add the ginger-garlic paste and all other spices for the marinate and mix everything well.
  • In the curd mixture, add cottage cheese cubes, onions, and capsicum. Gently mix it and cover the bowl. Let the cottage cheese and vegetables marinate for at least an hour.
  • Once marinated, thread the cottage cheese cubes and vegetables in a bamboo or metal skewer and keep them on the side.
  • Now add oil to a pan and let it heat. Place the cottage cheese skewers on the pan and start roasting them. Rotate the skewer to cook the Tikka uniformly.
  • You can switch off the flame when the cottage cheese and vegetables become brown and keep them aside.

Puree

  • Take a vessel and add water with a pinch of salt to it. As soon as it starts to bubble, add onions and tomatoes. Let them cook for two minutes and turn off the flame. Cover the vessel and keep it aside for 15 minutes.
  • Once it cools, take the onions and chop them roughly. Using a mixer grinder, make a fine puree of the onions.
  • Peel off the tomato skin and roughly chop them. Then make a smooth tomato puree in the mixer grinder. Let both the purees rest on the side.

Gravy

  • Heat oil in a pan and add the onion puree. Stir it well till it becomes golden.
  • Now add ginger garlic paste to it and sauté for a while. Let the raw aroma of ginger-garlic paste go away.
  • Add the tomato puree and keep on stirring continuously. After a while, you will see the oil leaving the mixture. At this point, add all the dry spices and stir well to mix everything evenly.
  • Now remove the pan from the flame and add fresh beaten curd to the gravy. Mix it well and add salt and some water. Stir again.
  • Let the gravy cook on low heat for 5 minutes. Then add cream and fenugreek leaves to it. Combine everything well.
  • Finally, add the grilled cottage cheese and vegetables. Turn the gas off and mix it well so that the Paneer combines with the gravy. Garnish it with diced coriander leaves and serve fresh.
  • Your Indian Traditional Marinated Cottage Cheese Curry from Punjab – Paneer Tikka Masala is ready. It tastes delicious with Indian flatbread or plain rice.
