Ingredients
- 1 cup Moth Bean Flour – Vigna Aconitifolia
- 1 cup Black Gram Flour
- 2 tbsp Gram Flour
- 1.5 tbsp Clarified Butter
- 1 tsp Red Chili Powder
- 2 tsp Papad Khar – Saji Khar Baking Soda can be used
- 1 tsp Ground White Pepper Powder
- 1.5 tsp Salt
- 1/3 cup Caster Sugar – Superfine Sugar – Baker´s Sugar
- 1/2 cup Water For Kneading
- Oil For Deep Frying
Instructions
- Take a large mixing bowl and sieve the Moth Bean flour and black gram flour. Add clarified butter and mix well.
- Warm up the water on the stove and add Papad Khar, carom seeds, salt, and sugar to it.
- Now add this water to the flour and start kneading to make a stiff dough.
- Take the dough and pound it with either your fists or a stone for 20 minutes. You will see that the dough becomes stretchy.
- Take small portions of the dough and make balls out of them.
- Place a ball on the rolling board and roll it thin with the pin. Put these Mathiya in hot oil and deep fry them till they become golden brown.
- After cooking, sprinkle some red chili powder on it. Your Indian Traditional Moth Bean Cracker from Gujarat – Mathiya is ready. You can easily store it in an airtight container for weeks, and it will remain fresh.
