The golden-brown fried snack has a crispy coating outside, and the inside filling is flavorful and seasoned with Indian herbs and spices. In India, Batata Vada is an evening snack, and everyone loves to have it with tea.

The word ‘Batata’ means potato, and the meaning of ‘Vada’ is fritter. The snack is round and approximately two inches in diameter. The combination of Batata Vada with fresh condiments and fried green chilis is mouthwatering. The famous Indian street food snack Vada Pav also uses it for the patty inside.

Potato Filling

  • 2 tsp Oil
  • 3 pcs Potato Boiled, mashed
  • 1 tsp Cumin Seeds
  • 1 pinch Asafoetida
  • 1 pc Chili Finely chopped
  • 3 cloves Garlic Finely chopped
  • 5 pcs Curry Leaf Finely chopped
  • ½ tsp Salt
  • ¼ tsp Turmeric Powder – Curcuma Powder
  • 1 tsp Lemon Juice
  • 2 tbsp Fresh Coriander

Gram Flour Batter and Frying

  • 2 cups Gram Flour
  • 2 tbsp Rice Flour
  • ¼ tsp Turmeric Powder – Curcuma Powder
  • ½ tsp Kashmiri Red Chili Powder
  • 1 pinch Asafoetida
  • ½ tsp Salt
  • ¾ cup Water
  • ¼ tsp Baking Soda
  • Oil For frying


Potato Filling

  • Take a pan and add oil to it. Let the oil heat and add cumin seeds, asafoetida, garlic, chili, and curry leaves.
  • Splutter this mixture for a few seconds. Now add turmeric powder and mix gently. Further, add the mashed potato along with salt.
  • Mix everything well and add lemon juice and chopped coriander. Combine everything gently and turn off the flame. Let the potato filling rest on the side.

Gram Flour Batter

  • Take a mixing bowl and sieve the gram flour in it. Add rice flour, turmeric powder, chili powder, salt, and asafoetida.
  • Combine everything well and add water. Now blend the mixture well using a whisk to make a smooth batter.
  • Finally, add baking soda to the batter and mix well.

Batata Vada

  • Take a small section of the potato filling and make a ball out of it. Dip the ball in the batter and coat it uniformly.
  • Now gently put the Batata Vada in hot oil and deep fry it. Keep stirring till it becomes golden and crispy from the outside.
  • Remove the batata vada and place it on a kitchen towel to drain the excess oil.
  • Your Indian Traditional Potato Fritters from Maharashtra – Batata Vada is ready to serve. Enjoy it with garlic condiment and fried chilis.
