In Tamil Nadu, the dish is called Uttapam. In Kerala, it is called Oothappam, while in Tulu, it is known as Ootappo.
The name is derived from the Tamil words “Appam” and “Uthia”, which means Poured Appam. Appam is also a type of pancake originating from Kerala.
There are various mentions of the pancake in ancient Tamil literature. The classic Tamil breakfast includes Uttapam along with Chutney which is a type of sauce. Ready-made mixes of Uttapam are available in the market. A portion is taken, and water is added. A fermented batter is then formed. These are spread on a cooking pan and only take about 5 minutes to cook.

Ingredients
- ½ cup Black Gram
- 2 tbsp Yellow Gram
- 2 cups Rice
- ½ tsp Fenugreek Seeds
- ¼ cup Poha – Flattened Rice
- ½ tsp Salt
- 1 cup Water
- 3 tbsp Oil
- 1 unit Onion Large
- 1 unit Tomato Large
- ¼ cup Carrot Grated
- 3 unit Green Chili
- ¼ cup Fresh Coriander Leaf
Instructions
- In a bowl, add yellow gram, black gram, and fenugreek seeds. Rinse.
- Take soaked rice into another bowl and rinse it.
- Add flattened rice to a small bowl and rinse it.
- Drain the water from the gram bowl and add it to the blender jar, along with the flattened rice.
- Add water and make a thick batter.
- Drain water from the soaked rice and add it to the grinder. Pour water and blend it.
- Transfer it to the previous batter and add salt.
- Cover and let it rest for some time.
- Grease a pan with oil and heat it. Pour a ladle of the batter.
- Lower the heat and add the veggies.
- Once the base is firm, flip it to the other side and cook as well.
- Remove and serve the Uttapam.

- Before pouring the batter, make sure that the oil is hot.
- Cook over low or medium heat.
- Veggies should be finely chopped. The batter spread should be thick, or it will break when flipped.
