Khaman is the of the few snacks that originate from Gujarat but is famous all over the world. It is a sweet, spongy, and delicious steamed cake that you can have at any time of the day.

The Indian Traditional Steamed Gram Flour Cakes from Gujarat – Khaman is a savory snack that is also vegan. It has a sweet-savory taste and a fluffy and spongy texture that makes it light and airy. Its preparation involves making a batter of gram flour, spices, and fresh herbs and cooking it with steam.

Khaman is widely famous across India, and you can find it in almost every breakfast shop in North India, along with Samosa and Kachori. Khaman has a tempering of mustard seeds and curry leaves on the top, and it tastes delicious with mint condiment.  Khaman and Dhokla are similar. The difference is that Khaman is prepared with chickpea flour, whereas Dhokla includes rice flour as well. Eno or fruit salt is one of the main ingredients to prepare instant Khaman, as it helps in its leavening.

Ingredients
 

For Making the Batter

  • 1.5 cups Gram Flour
  • 3 tbsp Semolina
  • 1/2 tsp Ginger Paste
  • 2 units Chili Chopped
  • 1 tsp White Sugar – Regular Sugar – Granulated Sugar
  • 1/4 tsp Turmeric Powder – Curcuma Powder
  • 1/2 tsp Salt
  • 1 pinch Asafoetida
  • 1 tbsp Lemon Juice
  • 1 tbsp Salt
  • 1 cup Water
  • 1/2 tsp Eno Fruit Salt or Baking Soda

For Preparing the Tempering

  • 3 tsp Vegetable Oil
  • 1/2 tsp Mustard Seed
  • 1/2 tsp Cumin Seeds
  • 1 tsp Sesame
  • 1 pinch Asafoetida
  • 2 units Chili
  • 5 units Curry Leaf
  • 1/4 cup Water
  • 1 tsp White Sugar – Regular Sugar – Granulated Sugar
  • 1/4 tsp Salt
  • 1 tsp Lemon Juice
  • 2 tbsp Grated Coconut For Garnish
  • 2 tbsp Fresh Coriander Leaf Finely Chopped

Instructions
 

For Making the Batter

  • In a large mixing bowl, add the sieved gram flour and semolina. Also, add chili, ginger paste, turmeric,  sugar, asafoetida, lemon juice, salt, and oil.
  • Pour in water and combine everything well to form a smooth batter.
  • Now add the fruit salt and pour it into a greased tray. Place this tray in a steamer and cook the Khaman for 20 minutes.
  • Once the Khaman cooks nicely, take it out from the tray and cut it into pieces.

Preparing the Tempering

  • Heat oil in a pan. Add mustard seeds and cumin seeds and let them splutter for a few seconds.
  • Then add the sesame seeds, asafoetida,  curry leaves, and chili. Stir for a few seconds and add water to the mixture.
  • Add sugar, salt, and lemon juice to it, and turn off the flame.
  • Pour the tempering into Khaman and serve it hot.
  • Your Indian Traditional Steamed Gram Flour Cakes from Gujarat – Khaman are ready. Enjoy it with green mint condiments.

NOTES

If you don’t have fruit salt, you can also use baking soda.
RECIPE VARIATIONS:
Khaman is similar to Dhokla. The only difference is that Dhokla includes rice flour in the batter.
SERVE WITH:
You can serve Khaman with green condiment, chilis, and grated coconut.
