Things to know about Mrabbat Shuwander Recipe

In Arabic, ‘Marrabat’ means ‘jam’ and ‘Shuwander’ stands for ‘Beetroot’. Jam making is a tradition observed for centuries in Iraq, jams made of summer and winter vegetables or fruits are a favorite snack usually served with traditional tea or as a side dish with bread. As beetroot is available in winter, the jam is made in winter but it can be refrigerated for a whole year.  Women make jams at home and save them in ceramic pots for better preservation of flavor. It’s a small and easy recipe with less than 6 ingredients. Nowadays many confectioneries also sell this style of jam but a homemade flavor of authentic Iraqi Mrabbat is uncanny. It’s a refreshing and tasty addition to savory Iraqi foods.

  • 500 grams (1.1 lb) Beetroot
  • cups White Sugar – Regular Sugar – Granulated Sugar
  • 2 tbsp Honey
  • ¼ cup Walnut Halves
  • 3 pods Cardamom Whole
  • 1 tbsp Lemon Juice
  • 1 tsp Vanilla Essence

  • Peel the beetroot and slice in long thin cuts.
  • Take a large pot and layer the beetroots at the base.
  • Layer sugar above the beetroots.
  • Add the water, cover the pot and set aside for a night. This will form a juicy mixture.
  • The next day, heat a pan and add honey, whole cardamom, walnuts, and vanilla.
  • Cook for 20 minutes, folding the mixture gently.
  • If you see a froth, remove it gently.
  • Just before a thick jam consistency forms, add lemon juice and mix.
  • Let it cool, and refrigerate.


To check if the jam is ready, put one drop on a surface, if it doesn’t go flat, your jam is ready.
The beetroots slices should be thin, you can also dice or use any gadget for spiral slices to make a different look.
It can be served as a dessert itself. Also can be served with sour cream or cream cheese, as a sweet snack. It can also be served with flatbread as a dip.
