Japanese Traditional Deep Fried Skewers from Shinsekai – Kushikatsu consist of meat, such as pork, beef, fish, chicken, or seafood. Also, vegetables are a common ingredient to include in the dish. Commonly, it is a bite-size meal on a bamboo stick. The recipe originates from Osaka. The city is also called the “kitchen of Japan.”

It was first prepared in 1920 in an old neighborhood called Shinsekai. Today, anyone can enjoy this dish at home and in different streets of Japan as there are lots of street food stands that serve authentic kushikatsu. On the street, it is served together with a delicious Worcestershire sauce using a communal pot. At high-end restaurants, the dish is served in a very creative and fancy way. However, the taste and experience of eating are almost the same. If you want to try the dish at home, you can create your dipping sauce called ponzu, made of sesame sauce, citrus juice, chili salt, and Japanese Kewpie mayonnaise with rice vinegar.

Ingredients
 

  • 2 pcs Prawn
  • 4 pcs Quail Egg
  • 2 slices Lotus Root
  • 2 slices Squash – Pumpkin
  • 2 slices Zucchini – Courgette
  • 2 cups Panko Breadcrumb
  • 200 mL (6.76 floz) Vegetable Oil For deep frying

Batter

  • 4 tbsp All Purpose Flour – Plain Flour
  • 50 mL (1.69 floz) Water Cold
  • 1 tbsp Japanese Mayonnaise Kewpie Brand

Dipping Sauce

  • 1/2 cup Worcestershire Sauce
  • 1 tsp Tonkatsu Sauce
  • 1/2 tsp Ketchup
  • 1 tsp Soy Sauce
  • 1 tbsp White Sugar – Regular Sugar – Granulated Sugar
  • 1/4 cup Water

Instructions
 

Preparation

  • Prepare and measure all ingredients accurately ahead of time.
  • Make sure to cut ingredients in bite-size.
  • Put all sliced ingredients into the bamboo stick. Set it aside.

Dipping Sauce

  • Combine all dipping sauce ingredients in a small saucepan. Simmer over low heat.
  • Constantly stir the sauce until the ingredients are dissolved.
  • Turn off the heat right before the sauce boils.

Batter

  • In a mixing bowl, combine the water, mayonnaise, flour, and egg to create the batter.
  • Dip each skewered ingredient in the batter then coat it with the breadcrumbs.

Frying

  • Over medium fire, heat the oil for deep frying.
  • Deep fry each skewer until golden brown. Make sure that all ingredients are submerged in the oil.
  • Serve the deep-fried skewered with its dipping sauce.

NOTES

  • Cut the shrimp’s tail to avoid spattering oil as you eat the prawn.
  • Eat fried dishes in moderation, especially for people with heart issues.
SERVE WITH:

Kushikatsu is best served with a dipping sauce of your choice. You may create your version of the sauce base on your preferred ingredients.
