The easiest technique to achieve the ideal sear and avoid overcooking the steaks on the grill is to use a two-zone or direct/indirect method. For a few minutes on each side, cook the Coulotte or Picanha Steaks over a direct fire before finishing them on an indirect heat source. These grilled steaks taste excellent with our cream sauce, which is easy to make. The first step in making the sauce is to sauté the mushrooms. Once the mushrooms have been removed and placed aside, prepare the cream sauce. To finish and thicken the sauce, stir the mushrooms back in. Reverse Sear Sirloin Cap with Chimichurri

Culotte steak, coulotte steak, or picanha are other names for the excellent, tender sirloin cap, which is a slightly less popular cut of beef. It works brilliantly for the simple reverse searing technique in this recipe. In this technique, the meat is first slowly cooked in a low oven or grill until it is almost done, then quickly seared to finish. Make a crosshatch design in the fat cap by cutting it without getting into the meat that penetrates the fat completely. It keeps the meat tender to leave the fat. While maintaining the meat’s structure, crosshatching enables the fat to cook up crispy. As a result, the flesh is soft, perfectly cooked, and has a beautiful golden-brown crust. For visual clues, refer to the video and step-by-step images in the link. The chimichurri is one option for serving it to make it a perfect dish.

For this recipe, the coulotte is generously rubbed with Grill Mates® Brown Sugar Bourbon Seasoning before spending 45 minutes in the smoker since the coulotte is cooked through smoking this time. In the past, when people first began to inhabit caves, meat was smoked. It was one of the first methods for preparing meals. The coulotte steak also gets more flavor from smoking. Brazilian Coulotte Steak Recipe

Some get confused with Picanha and Coulotte Steak. Although they are the same cut, culotte steaks are prepared differently from strip steaks, and picanha is skewered on a horseshoe. Picanha meat may be the tastiest. Additionally, the fat cap bastes the meat throughout cooking to keep it moist and flavorful. You only need the meat and basic ingredients to make this recipe. Here, we are flavoring it with oil, garlic, and onion. By rubbing it with oil and seasonings, you can cook picanha whole if you choose. Afterward, cook it for 40 to 60 minutes, or 20 minutes per pound, on the grill or in an oven preheated to 375°F (190°C). The only accurate way to check doneness is by using instant-read thermometer into the center of the coulotte steak.
