Ingredients
Vegetables
- 1 pc Potato Medium, cubes
- 5 pcs Beans Chopped
- ½ Cup Cauliflower Small florets
- 1 pc Carrot Small, chopped
- ½ tbsp Salt
- Water For boiling
Masala Powder
- 1 tbsp Sesame Seed
- 1 tbsp Coriander Seed
- 1 tbsp Poppy Seed
- ½ tbsp Cumin Seeds
- 1 thumb Cinnamon Stick
- 2 units Clove
- 1 unit Cardamom
- 4 units Black Peppercorn
- 2 tbsp Grated Coconut
- 3 units Dried Kashmiri Red Chili Pepper
Gravy
- 3 tbsp Oil
- 1 pc Onion Medium, finely chopped
- 2 pcs Tomato Medium, finely chopped
- 1 tsp Ginger Garlic Paste
- ½ unit Capsicum Cubes
- ½ tsp Turmeric Powder – Curcuma Powder
- 1 cup Water
- Salt To taste
- 3 tbsp Fresh Coriander Chopped
Instructions
Vegetables
- Combine all the vegetables in a vessel and pour water into it. Add some salt and boil the vegetables for 10 minutes.
Masala Powder
- Take a large pan and dry roast the coriander seeds, cumin seeds, sesame seeds, and poppy seeds.
- After a minute, add the cinnamon stick, red chili powder, cardamom, and peppercorns. Once you dry roast these spices, blend them into a smooth powder in a grinder. Set a side.
Gravy
- Heat some oil in a pan and add onions and ginger-garlic paste to it. Sauté the onions till they become translucent.
- Now add tomato and sauté again. Toss in the capsicum and the Masala powder along with the salt to the mixture and combine everything well.
- As soon as you see that the oil separates from the gravy, add the boiled vegetables to the mixture. Cover the pan and let it simmer for 15-20 minutes.
- Add chopped coriander leaves to garnish. Your Indian Traditional Vegetable Curry from Maharashtra – Veg Kohlapuri is ready. Serve it hot with Indian flatbread or rice.
