Ingredients
- 6 tbsp Oil
- 1 pc Onion Large, sliced
- 3 pcs Bell Pepper Diced
- 1 pc Eggplant – Aubergine Diced
- 2 pcs Potato Peeled, diced
- 6 pcs Tomato Diced
- 1 clove Garlic Chopped
- 1½ tsp Salt
- 1 pinch Red Pepper Flake
Instructions
- In a large shallow pan, add oil and bring to heat.
- Sauté the onions until soft.
- Add the bell pepper, eggplant, and potatoes and fry for 5 minutes.
- Add the tomatoes and soften them.
- Add salt, pepper, and garlic and mix well.
- Cook for 20 minutes with the lid on.
- Keep the heat medium to high.
- When all vegetables are soft, your stew is ready.
