  • 450 grams (15.87 oz) Oyster Fresh, Medium Size
  • 2 pcs Egg Large
  • 3 tbsp Vegetable Oil
  • 1/2 tsp Fish Sauce

Batter Mixture

  • 120 grams (4.23 oz) Potato Flour
  • 30 grams (1.06 oz) All Purpose Flour – Plain Flour
  • 30 mL (1.01 floz) Water
  • 1 tsp Fish Sauce
  • 1 tsp Soy Sauce
  • 1 tsp Sesame Oil
  • 1/4 tsp Ground Black Pepper
  • 1/4 tsp Salt

Chili Sauce

  • 3 tbsp Chili Sauce
  • 1 tbsp Rice Vinegar – Rice Wine Vinegar

Instructions
 

Preparation

  • Prepare and measure all ingredients accurately ahead of time.
  • In a bowl, mix all the ingredients needed for the batter. Set aside.
  • Whisk the eggs in a bowl, and set it aside.

Frying

  • Drain the excess water from the oyster using a paper towel.
  • Over medium fire, in a non-stick pan, add the vegetable oil. Give the batter a stir.
  • Using a ladle, pour the batter in two portions and spread it around the pan.
  • Fry until the edges become a bit crispy and the center is still soft. You may break the batter into several chunks or leave it as one whole batter.
  • Pour half of the beaten egg into the batter, then flip it over and fry the other half.
  • Add some oil and pour another half of the egg and fry again until it sets.
  • Flip it over and place it at the side of the pan.
  • Put some oil on the pan for the oyster.
  • Fill the ladle with the batter, add 6 to 8 pieces of the oyster into the ladle, and pour it into the pan.
  • Stir fry the oyster for 30 seconds and mix it with the batter and the egg you set aside. Make sure not to overcook the oyster to avoid having a gummy texture.
